Happy Valentine’s Day!
The arctic blast that has dominated New England’s weather the past few weeks (months? It feels like years) almost stopped me from driving the 300 miles back to Boston this weekend, but I saw a window between the gusts of snow and just went for it! It feels like just yesterday that I was in London for Valentine’s day. We cooked the most delicious meal of peppercorn steaks, roasted veggies, and chocolate truffles for dessert and then wandered along London’s South Bank and people watched everyone else on their dates. This year, it was special enough to just celebrate being together in Boston. The holiday did put me in the mood to whip up a special treat though.
CocoNUTs About You Cupcakes:
Prepare one box of devil’s food cake (Better yet, make it from scratch!)
With Homemade Cream Cheese Frosting:
Combine with a mixer:
1 Package of Cream Cheese
1/2 Stick of Butter (Room temp)
2 Cups Confectionery Sugar
Drop of Vanilla
The recipe I was going off of (Ina Garten’s — yum!) called for slightly different measurings and a higher butter to cream cheese ratio, but this mix worked well for me.
Top off frosted cupcakes with Shredded Coconut and a candy heart and enjoy one (….or two or three or four…).
