Last night, as I was procrastinating bedtime by perusing Pinterest, I stumbled across Chocolate Covered Katie. First of all, this blog is sweet! Second of all, I am really jealous that I didn’t think of a name as cute as Chocolate Covered Katie myself.
Katie’s recipe for Pumpkin Chocolate Chip Cookie Bars caught my eye immediately because I am an absolute sucker for all varieties of pumpkin treats. I whipped up the recipe when I got home after class without much forethought. WOW. These are probably the best desserts I have ever made. Maybe even ever eaten. The pan is already half gone and I am not even ashamed (don’t worry I did share with my roommates—reluctantly).

The best thing about these bars is that they are SO moist. Katie’s picture’s make them look a little cakier, or maybe (probably) I just undercooked mine but they were so good my mouth is watering just thinking about them. Quick, get baking!
